Question about seitan

I was wondering if anyone here makes seitan. I have never made it, but thought about trying it. I know that there is a recipe for making seitan and recipes using it in the "New McDougall Cookbook" (circa 1993) but have not seen it mentioned in his latest books. So I was wondering what thoughts people on here might have about seitan and if Dr. McDougall still thinks it's okay to eat.
