Tonight I had potato gnocchi with asparagus, basil and garlic. Just threw in chopped asparagus to cook with the gnocchi, then tossed gnocchi and asparagus in minced garlic, chopped basil and a squeeze of lemon.

I steam potatoes and then just make a dough with a little bit of potato flour. Sweet potato works well too. I think I have the recipe on my blog. I will get you a link.

Very nice!!!

Here is a meal where each of the components doesn't exceed 3 ingredients, came up with it when I was hungry at my sister's house and had to use what she had, so it's semi-homemade but definitively MWL, filling and delicious. My goal is to spread the word about healthy eating by eating plant foods, please watch, like, share and subscribe if you like it, that would mean so much :)

Wonderful video. Thanks for posting. That meal does look so yummy. It's amazing what we can do with food if we allow ourselves to get creative.

Although it is listed on some other threads, I think this McDougall classic needs to be in this list. Says me. :)

From McDougall Quick & Easy Cookbook page 88.

Speedy International Stew

2 (14.5 oz.) cans stewed tomatoes (seasoned with either Italian, Mexican, or Cajun seasonings)
1 (15 oz.) can of black beans (drained and rinsed)
1 (16 oz.) can of corn kernels (drained and rinsed)

Place all ingredients in a medium sauce pan and cook over medium heat for 5 minutes (or so), stirring occasionally. Makes 4 servings.


The creative part comes from varying the kinds of beans (whatever is handy!) and the kinds of tomatoes. You can even used chopped tomatoes (the no-salt-added kind is usually good) and add your own spices to taste. I've done that and used some curry powder to good effect. You can also add a little vegetable stock or water to make more of a soup than stew. Lots of possibilities!

I am going to try this one for sure! I get tired of Mexican or Asian rice flavors! It's always nice to have something different!

Summer Salad Dressing
1/2 cup favorite FF barbeque sauce
2 tablespoon red wine vinegar
1 tablespoon lemon juice

Stir and pour over greens/veggies! You can play with the types of vinegar, including balsamic and change out lemon juice for lime or OJ.

My current favorite dessert

Mash a ripe banana in a bowl
Add Tbs (more or less to your taste) of cocoa powder
Add cinnamon, cardamon, vanilla if you like

Mash and stir until nice and smooth. EAT! I do prefer to get it nice and cold first for a couple hours in freezer..

It must be delicious :-D

Sometimes when I want something sweet (which is not often as I don't have a sweet tooth) I add about a tbsp freshly ground poppy seeds or flax seeds to the mashed banana, stir, then sprinkle it with some frozen berries. These are the easiest and the best tasting treats (at least for me).
