Another Lentil Recipe - Lentil Chili

I receive a newsletter "Managing Diabetes" from everydayhealth.com. Most of the recipes are not vegan, but one day this week "Lentil Chili " was the recipe of the day. Since I am still doing the Pantry Cleanout started many months ago, this caught my eye because the recipe called for lentils and bulgar wheat. I made it in a 4 qt. crockpot. It is delicious. The recipe is suppose to make 6 servings, however 4 quarts of chili will make more servings then that for me. My freezer stash will grow.

Lentil Chili

1 chopped onion ( I used dried onion flakes)
4 minced garlic cloves( I used dried minced flakes)
1 cup dry lentils
1 cup dry bulgar wheat
3 cups veggie broth ( I also added water while cooking)
2 cups canned diced tomatoes
2 T. chili powder (I used more)
1 T. cumin (I used more)

I put all the ingredients into the crockpot and every so often had to add more water. The chili was too thick. So eventually after adding water every so often, the pot was full of yummy chili. I let it simmer a long time. This will be good as a potato topper. :)
