Thai Watercress recipe?

Thai Watercress recipe?

I love the watercress one can get in some Thai restaurants. I can't find the stats on it, though, nor a recipe. I would love to make it myself.

I've tried googling on "Thai watercress" as well as the name on the menu, "Phad Puck Boong," but I haven't come across a recipe.

Can anyone help? I guess I can do some more searching if no one knows.

It looks like what I had, only mine was made extra spicy. I guess I'll start out with this, trying to reduce or eliminate the oil, and see what I can do.

What I had contains bits of other ingredients, but maybe that is the way this particular chef makes it.

But this recipe contains the base to work from, so thanks so much. It seems really simple, which is all to the good!
