Thought this was a fitting recipe. These are awesome. Can be eaten plain or however. Whole Family Loves!
SimplestOatmealPancakes
You will need: 2 cups Rolled Oats or GF Oats 2 cups Water 1 Ripe Banana 2T or less Real Maple Syrup 1/4 t Sea Salt or none 1 t Vanilla
Blend all ingredients in the vita-mix. Let stand to thicken as heat up griddle to 325. Pour by 1/3 cup onto griddle. Then ~Chow Down!! These are heavy, dense, and filling~will turn out every time!

Just want to say thanks again--I am about to eat some leftovers of these topped with thawed blueberries smashed on the top. They are just marvelous. Filling, easy to make, and easy to digest. I like the idea of the buckwheat groat variant--as you might have guessed from my previous comment, I am a fan of buckwheat in general, and buckwheat pancakes too. Moonwatcher~ You are so very welcome!! And yes I would usually soak the groats overnight, but have soaked as little as 4 hours in a pinch, being sure to strain and rinse well before using. Enjoy!
I have Saturday off and am going to make these for my wife and son. He enjoys pancakes and he enjoys oatmeal. Now he gets to enjoy them together! Will reply and let you know how they went over.
Made this simple recipe this morning. I enjoyed them, my son wanted "plain" pancakes, which I wasn't going to make. Not sure why he didn't want them, maybe the banana, which seems odd since he likes bananas. The wife had a few but no real review from her. Nonetheless, they looked, smelled and tasted good. Thanks!
