What should I stuff these potatoes with?

I'm thinking of something to take to a pot luck this weekend. It needs to be neat to eat and good at room temperature. I'm thinking of baking some baby Yukon Gold potatoes, cutting of a slice, hollowing them out, and stuffing them with something (or several somethings). A nice, garlicky hummus comes to mind. What else do you think would go well?

Agree, put some button mushrooms into a heavy pot, splash with white wine, throw in some chopped shallots, garlic, parsley, salt and pepper. Cook slowly until the wine has reduced by half, then add a few splashes of plant milk, reduce by half again. Personally I would whz the potato pulp in the food processor until smooth, add it back to the mushrooms and restuff the taters.

or maybe a simple pesto?
