We often use the usual spaghetti-type tomato sauce with beans and veggies, but would love to find some new ones. Ideas?

I chop up some onion really small and let it marinate in a bit of vinegar (usually Apple Cider vingegar) and then a pinch of cayenne. I really enjoy this as a simple and no added salt topping.

This is what I like to do:
I put brown rice on my plate, then put some black beans on it, then some corn and then put my favorite salsa on top (mango is really good)!!
It's especially good served with a side of greens like collards, that I've cooked in my pressure cooker with garlic and onions!
Now I'm hungry!!

Sautee mushrooms,onion and garlic in soy sauce, mix in to the rice, very
yummy....

Wakame seaweed soaked for a few minutes and drained, with a little soy sauce and wasabi mustard. My fave!

This is more of a breakfast or dessert than a main dish, but I love heating up cooked brown rice in the microwave with a banana sliced on top. After a minute or two in the microwave, you can use a fork to mash the melty banana and mix it in with the rice so it's all warm and gooey. Stir in some cinnamon, and it's delicious, plus it smells great too.

Something I like to do (but not exactly a topping) is make a brown rice salad with a little banana, a little chopped apple, some chopped celery, a dash of lemon juice and about a teaspoon of chopped walnuts if you want. I eat it cold and it's delicious.
