Bri -- what are chipstacks?

In a post responding to Mallow's "They can't take it anymore!" you had listed a bunch of "traditional" dishes that are easily converted, but I must know what chipstacks are, as I am intrigued! ;)

Hi limberone,

I grew up calling them"haystacks", but in one of McDougall's recipes they're called "chipstacks". I can't remember if it was a newsletter or one of his books. My 5 year old stepson prefers the name chipstakes so that is what I call them now.

Basically it's nacho's with McDougall approved food. I usually do a layer of chips, with pinto beans, lettuce, green onions, and a pico de gallo salsa. I often play around with the beans. My son and husband add cheese to theirs.

You can add a variety of favorite foods that are mexican oriented and make them anyway you want.
