Hominy is acid soaked dried corn, then washed and dried. Acid soaked grains will not sprout. The kernel puffs to about 2x normal size. The hull and germ are removed, so some loss of fiber and nutrients vs whole corn.

I’ve had it a couple of times. It is used in a Mexican soup dish called Pozole. Very corn taste. Whether you like it is cultural and personal preference.

I really enjoy hominy. The canned stuff in the stores is usually very high salt, so beware if you are being mindful of that. It has a toothsome texture and pleasant taste.
