I need a "Cheese" Sauce Recipe using Nutritional Y

I bit the bullet and baught a container of Nutritional yeast finally today. I would like to see your favorite cheezy recipes. I want to use it for sauces over veggies, maybe enchiladas and mac/cheese....and casseroles.

There is a popular recipe at the healing heart website, but I really didn't like it very well. The pureed white beans had a weird mouth-feel to me, and the flavor wasn't quite right. I suppose I need to customize it.

there is a good one in Bryanna Clark Grogan's 20 minutes to dinner. You can adapt it for pizza or quesadillas or to make grilled "cheese" sandwiches, or have it more runny for fondues or sauces.
