What to Put on Vegetables?

I used to think I was doing the right things when I put Smart Balance on steamed vegetables. We know how bad that is. I buy the large bags of broccoli crowns at Costco, steam them, and now use low-salt coconut aminos. Bui how about corn, peas, etc.? Corn on the cob?
Even today I use a tiny amount of Smart Balance. Any alternatives? Dry doesn't sound good.

Try making this “butter” from cornmeal. If you don’t like this one there is also a version made from cauliflower. I often put mustard on brocolli, but I like it plain also.

1/4 cup cornmeal with 1 cup water.
Cook on the stove until it thickens stirring it constantly,

Once cooled blend with:
1 tsp lemon juice
1 tsp Apple cider vinegar
1/2 tsp salt
1 tsp nooch (optional)
1/4 tsp turmeric (optional)
2 TBS water or enough to get it to blend

I leave out the turmeric as I find it tends to overpower the recipe.

No need to put anything on vegetables.
Vegetables have flavor all their own. Each vegetable can be prepared multiple ways.
Put vegetables on things. Like rice, potatoes, pasta, pizza, etc.
Turn vegetables into sauces and soups.
Add more vegetables to your vegetables: onions, tomatoes, chilis, etc.
Concentrate the flavor of your vegetables. Steam, drain and roast them.

Take broccoli. Here are a few ways I use broccoli.
- Rice and broccoli with soy sauce
- Steamed and roasted broccoli with toasted cheesy sauce
- Baked pasta with broccoli and vegetables
- Shepherds pie with broccoli and vegetables
- Vegetable soup with broccoli

Thanks - some good suggestions there. I will read them over again. Dry doesn't work for me, but I will see what changes I can make.

You might like Benson's Table Tasty salt substitute. It really has a salty flavor but has no salt in it. I buy it in a 3 ounce bottle with a shaker top from Amazon.

I'm not a fan of plain vegetables either. Some are good with lemon juice. Or try some of the following (adapted from the cookbook Dining at the Ravens):

Cashew Bechamel

1 c raw cashews, soaked and drained
1 shallot, roughly chopped
1 T nutritional yeast
1 T minced fresh or 1 t dried thyme
2 cloves garlic
1 t salt (or less)
1/2 c water
juice of 1 lemon
1 T white balsamic vinegar or white wine vinegar.

Combine all ingredients in a high speed blender and puree until completely smooth
Season with additional salt and lemon juice to taste

Braising Sauce

2 cloves garlic, finely chopped
2 1/2 inch slices fresh ginger root
1 t turmeric
1/2 c tamari
1/2 c water

In a medium saucepan saute the garlic, ginger and turmeric in a few teaspoons of water for about 1 minute
Add the tamari and water and simmer uncovered over medium heat for about 15 minutes.

Refrigerate until ready to use.

Use this to braise vegetables, especially leafy greens. I particularly dislike kale, but it's quite edible braised in this nice sauce.

Kale Sauce

I'm a kale hater, but must admit this stuff is pretty good:

1 bunch (about 1/2 pound) dinosaur kale
1 c cashews, soaked for at least 20 minutes and drained
1/2 bunch (about 2 oz of cilantro) If you don't like cilantro, (I don't) then use parsley
1/2 jalapeno pepper, seeds removed
1 t sakt (or less)
dash of cayenne pepper (or not, if you don't like it too hot)
2 c water
juice of 1 lemon

Steam the kale for 3-4 minutes
Combine the steamed kale adn remaining ingredients in a high speed blender and process until smooth
Let cool and store in the refrigerator up to 3 days. Warm prior to serving.

Good luck eating your vegetables.

Since abandoning oil, vegan cheese, salt and whatever other junk I used to put on my vegetables, I have come to like them just fine plain.

I'm also too lazy to make any kind of sauce that has more than 2 ingredients :).

But I do sometimes use different varieties of mustard, vinegar and salsa. I also like some of the Ms. Dash varieties.

I live near a wonderful spice store (Penzey's) , so occasionally I buy a different spice mix for novelty: garam masala, Italian herbs, different ethnic cuisine mixes...etc. Lately I've been using a Mediterranean spice mix called "Mural Of Flavor" that kind of smells like my grandmother's kitchen and seems to go with any kind of veggie .

Of course, I always read the labels to make sure these don't have non-McDougall compliant ingredients. Fortunately, it's been easy to find simple condiments that won't cause any harm.

P.S. Regarding corn, it actually can be wonderful just by itself. It's sweet corn time around here, and I cook mine in the microwave for a couple minutes and eat it plain. It is so sweet and juicy it doesn't need anything else.
IMO

Try it -you might like it!

Mentioning corn makes me hungry -time to go eat some LOL.

You can roast whole garlic heads and then pop the cloves out and mash, they're basically paste at that point anyway. smear a little of that on your veggies and a bit of salt (permitting). Roasted, the garlic is sweet and savory at the same time.
