Spinach Red Cabbage Chili Pasta Sauce

Just made this vegetable pasta sauce tonight, and very happy with result.
(Kids got served regular spaghetti with marinara sauce.)

Inspired by Williams Sonoma Pasta Sauces cookbook, Spicy Italian Sausage Cabbage Sauce recipe, without sausage or olive oil.
A combination of steamed spinach and roasted Anaheim chili replace the spicy Italian sausage. Pan roast and a few tablespoons of marinara sauce to replace the olive oil.
Serve with whole wheat penne or rigatoni pasta.

PREPARATION
- Marinara Sauce (as needed)

MAIN
- 1/2 onion
- 2 cloves garlic
- 2-3 plum tomatoes
- handful red cabbage, sliced
- 1 bunch spinach, chopped
- 2 anaheim chilis, roasted
- 1/4 tsp salt
- 2+ Tbsp marinara sauce, as needed to coat pasta

In toaster oven 450F, roast chilis 20m.
Steam and drain spinach. Squeeze out excess moisture.
In stainless pot over low heat, pan roast onion, then garlic. As necessary, deglaze with splash of water. Add tomatoes and cabbage and contine to simmer. Add chilis and spinach. Continue simmer until cabbage softens.
Add cooked pasta to pot and coat with sauce. Add extra marinara sauce as needed to barely coat pasta.
