There are probably a couple recipes here:

They won't be strictly McDougall-friendly, but oil can usually be omitted and "frying" can be done in a dry pan, or latkes can be baked in the oven until done.

You have starchy potatoes, such as russets, and more waxy varieties such as red potatoes. The red potatoes have less starch in them and are better for boiling and potato salad, for example.
