Hot Lentil Sausage

Improvement on my previous recipe version.
What makes sausage, instead of burger, is abundant seasonings and chilis.

I used today as pizza topping, and also made into sausage rice filling, and tested with each stuffed bell peppers, stuffed poblanos and stuffed cabbage. Turned out very good in all four.

Makes 6 rounds.
Can be frozen.

USES
- Stuffed Bell Peppers
- Stuffed Poblano Chilis
- Stuffed Cabbage (Pigs in a Blanket)
- Pizza Topping

PREPARATION
- Brown lentils
- Brown rice
- Marinara sauce

BASE
- 1 cup brown lentils, cooked
- 1 cup brown rice, cooked

SPICES
- 2 tsp oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/4 tsp black pepper

TOASTED WHOLE SPICES
- 1/2 tsp caraway seeds
- 1/2 tsp fennel seeds
- 3 Tbsp dry minced onions

DRY
- 1 cup whole wheat flour

WET
- 1 cup marinara sauce
- 2 chipotles in adobo sauce
- 1 New Mexico chili, minced

Instructions
- Toast dry spices.
- In large mixing bowl, combine base ingredients with spices.
- Add and mix in flour.
- In standard blender, blend chipotles in adobo with marinara sauce. Mix in minced fresh chili.
- Add blended sauce in portions to make dough of desired moisture.
- Measure 1/3 cup and shape into rounds. Place on parchment paper lined baking tray.
- Bake toaster oven 450F 20-25m.
