McDougall Cooking Challange 2

Well, with Thanksgiving this week, I thought a good challange would be to rate one of the McDougall's holiday recipes. Here are the links I found to Mary's recipes posted in the newsletters:

Results of McDougall Cooking Challange 2

As part of this challange, I chose to make the Holiday Stuffed Pumpkin from the Oct. 2005 Newsletter http://www.drmcdougall.com/misc/2005nl/ ... ecipes.htm but instead of a pumpkin, I made individual servings using Sweet Dumpling squash.

The stuffed squash was delicious, very moist ~ the stuffing reminded me of stuffing mom used to make. :-D

It did taste a little salty to me (probably because I do not cook with salt) so I think I'd use less soy sauce (or none at all) the next time I make this. Yes, I will make it again, and soon ~ I won't make it just for holiday feasts either!

Really good recipe, I give it :thumbsup:
