I am making this Barley Lentil Bake for dinner:

http://veganeatsandtreats.blogspot.com/ ... -bake.html

I found it a while ago and thought it looked good. The directions are a bit odd. I have no idea why the cookbook author tells you to cook the lentils/barley in one pot and the carrots and herbs in another. :? Seems quite unnecessary. I did it all at once using only one pot!

Other changes ... I didn't bother with the flour step. Barley does a pretty good job of thickening on its own. I added half a large can of diced tomatoes instead of the one tomato and I now have a big casserole that I'll be eating for a few days. So I hope I like it. :-D

I'm hoping today will be my last less-than-perfect day. LOL I sound really determined, don't I? Anyway, we ate the last obviously non-McDougall food in the apartment, and I bought lots of CLEAN groceries... so hopefully tomorrow will be no more excuses, just do it!

Romaine salad

Snack:
More pancakes with apple butter

Lunch:
Bowl of Stewed Winter Vegetable soup, apple

Snack:
1 1/2 bananas, 1 serving ( eek!) tater tots with barbeque sauce

Dinner:
Mongolian Noodles from Q&E cookbook YUM YUM! :)
