What's cooking Mon. 11/13?

B - country fries (fat free), poultry seasoning, grilled in GF grill
S - banana-mixed melon, flax smoothie
L - home-made pita chips (ff pita ww bread), salsa, avocado, vegan soy cheese, black beans
S - pear
D - salad, tahini dressing, veggie-cabbage soup

B - rolled oats

L - Boiled dinner

snacks - apple, salad

S - Southwestern bean salad

Usually, I make a recipe of crockpot oats and it will last almost a full week. I'm the only one who eats it, the men in the house don't like it much. Well. Friday night I did a batch of apple oats with 6 cups of Spy apples instead of the usual 4, and a whole tablespoon of real good cinnamon and freshly grated nutmeg. Saturday morning when I got up the guys were eating it and there was just enough left for me. I had a small bowl Saturday and some yesterday morning. Not that I'm complaining, but I have to make more oats tonight because my delicious apple pie oats are all gone!!! :eek:
It IS the food! :unibrow:

L: steamed cauliflower, baked acorn squash

D: green beans, baked potato

L - leftover veggie soup & salad

D - baked potato, steamed broccoli & salad

Snacks - fruit, if hungry

A few years ago, I'd make a crockpot full of a mixture of 2 or 3 different kinds of hot grains, spices & fruit once or twice a week. My "I hate oatmeal" DH would never eat them until I made one with mainly oats, apples & cinnamon ~ he gobbled it up and said it smelled so good he couldn't resist. He now eats oatmeal at least 4 days a week, especially if I'm fixing it. :D

One of my husband's favorite breakfast is a mix of cracked corn, barley, oats, spelt, kamut and brown rice that he makes. He cooks it in the microwave, then adds a can of green chilies and a small can of garbanzo beans (about a half cup?) and then cooks for another minute and goes to shower. He loves this, and it smells pretty good, too, but I've never tried it. Usually he doesn't like my oats, he says they are too mushy. He likes to eat rolled oats almost uncooked - he is one of those rare individuals who qualified for Raw Bits, he even has the T-shirt! :-D

I agree with him, the chewier, the better! That is why I always mixed the grains in the crockpot ~ straight oatmeal has to be chewy! :-D My DH will only eat the oatmeal when it is 'mushy' (like the crockpot mixture) and refuses to eat the oatmeal that I prefer because he says, "its not cooked enough!" :eek: So, to make it work for both of us, I make an extra large serving of oatmeal cooked to his liking and I take a small amount of it in my bowl and dump in about a half cup of raw oats & some fruit. We both get what we like! :D

So what is "Raw Bits?"

Raw Bits was one of the sponsors of Garrison Keillor's radio show a few years ago that was on public radio. It was a cereal that was sold only to an elite few, supposedly, that could tolerate the extremely high fiber content of the cereal. Myhusband was a big fan of the show, I had never heard of Keillor until I met my husband. There are tapes and CDs available and they are wonderful to listen to. He did songs and had great guest musicians like Chet Atkins that ended up being regulars, and Keillor himself did stories that are just a delight to listen to. Other 'sponsors' were Cafe Beorf or something like that, and Powdermilk Biscuits - we have a T-shirt for that one, too.
