Tofu question and can anyone tell me how soba noodles taste?

I have a block of tofu that I bought to make salad dressing. It is "lite" silken tofu, and I used about one third of it for one recipe. Can I keep it in a covered dish with water to cover it in the refrigerator for quite a while, or does it have a time limit?

I also have some soba noodles that I've been wanting to try but am wondering if they have a different taste. They certainly look odd and my family is sort of not wanting me to feed them these things! :eek: I am brave though, after finally finding a recipe that contains tofu that I actually like, I'm ready to try these noodles. I must have seen a recipe for them and that's why I bought them, but don't know now where that recipe actually is.

You don't really need to cover the lite silken tofu with water. Put it in a leftover dish and cover it. It will keep about 7 to 10 days.

Why not make some sour creme to put on a baked potato? Need a recipe?

I wouldn't mind another recipe, if it's as good as the Bryann's Cheesy salad dressing I've been using. I love this stuff! I have put it on my shredded salad/coleslaw and also on baked potatoes.

I have tried one other tofu style mayonnaise thing and absolutely hated it, so this is a real victory for me. It's the first time I've ever eaten tofu, in spite of buying it a few times and just never working up the nerve to try it. Silly, huh?
