I wonder if you like spices at all. Every time I prepare my veg I sprinkle over a couple of pinches of a favourite spice. My all time favourite is Ajwain and Cumin comes in at a close second. Then I steam the veg and the result is tastier than with nothing. Also I find the addition of very finely chopped ginger just before steaming adds a delicious kick. And or fresh garlic. I even make what I call my McDougall curry. I sprinkle over a good mix of various curry spices over my favourite curry veg...in this case peas, onions and carrots. Then steam. Quite delicious.
As regards mashed potato...if you boil or steam the potatoes you could add in a small amount of the cooking liquid to make them more moist. A nice grinding of pink pepper also makes it ultra delicious.
If it helps you to enjoy the diet then maybe experiment with the spices and herbs.
Doctor Mc D himself seems to be rather fond of sirracha? Sauce. And soy sauce is tasty on certain things. I don't like the regular but the low salt Kikomans is really tasty.

Of course all these tips could be applied to grains and pulses too.
