Daily Meals Log

My first day meals.
I made oatmeal for breakfast with unsweetened apple sauce.
Lunch and dinner I have 3 medium boiled potatoes with mushrooms, Italian seasoning, salt and pepper.
Tomorrow, I am planning to make a polenta casserol with vegetables I saw in a True North cookbook.
Since I am staying away from nuts and oils, I will use a homemade tomato sauce.

Today I ate oatmeal with applesauce.
I made the vegetable casserole and it was good.

Made homemade tortillas for the first time and salsa.
Polenta Casserol was better the second day.
Planning to make a vegetable and potato dish tomorrow.

Today, I made a potato and vegetable dish. I made my own sauce with mustard and ketchup.
Tomorrow I plan to make a brown rice dish.
I weighed myself today. Was 200 lbs now 194. I know it's water, but I have cut out a lot of salt.

Congratulations, Melinda! I love to see the scale numbers go down even if it is water weight! Way to go! Your meals sound very tasty. :D

Since this stay at home orders in Austin, TX, I have had plenty of time and no distractions. It gives me time to listen to what I am actually craving. Then I can learn if I am hungry or just want junk food.

Today, I finished off the homemade salsa and tortillas. I also ate a homemade pasta primavera with brown rice instead of pasta, since I have a gluten issue.
I plan to make an oatmeal and blueberry dish I saw in a McDougall cookbook.
I bought some tofu to practice making stir fry without the oil, of course.

I just didn't feel like eating anything today. Not that hungry. Later this afternoon, I was actually hungry and ate 4 medium size potatoes.
I will do some experimental cooking tomorrow and try to make cucumber vinegarett dressing for my salad. I noticed that even the plant based dressing use lots of nuts, which I don't need. I also have a Left Branch Bundle Block and for me, absoluity NO OIL!

Today I ate blueberries,bananas and oatmeal for breakfast.
I made a salad for lunch with homemade dressing. I need to practice my dressing skills.
Later, in the evening, I watched a movie and had popcorn. I put cyane pepper, salt and nutritanal yeast on it.
I was down to 191 lbs from 200 lbs for the week.

I got a stomach virus Sunday. Better today.
Today drinking water with fruit juice to wash this out.

Let us know when you get a handle on that homemade salad dressing thang. I haven't found a salad dressing that doesn't have tofu in it, that I like. There are several creamy dressings based on tofu that are tolerable. Sometimes some regular balsamic vinegar is enough. Depends what all is on the salad. Sometimes, if there's a good variety of veggies in the salad, the dressing can be something like salsa.

anyway, looks like you're doing really well. Keep it up!
