B - pan fried potato (I think I will use a sweet potato with a little turmeric and curry powder for seasoning)

L - cabbage slaw, some pinto bean soup, and maybe some roasted veggies

D - mixture of mustard and collard greens and a sweet potato

S - grapefruit and an apple

JasonTN and Sher posted two tofu recipes on the MWL forum. I hope to use them when I need to take veggie trays to gatherings this holiday season. Usually, I just take a dip or dressing that isn't for me to use. Now I will have a healthy one to share. :)
